Ingredients
- 20 oz cheese tortellini (uncooked)
- 10 oz cherry tomatoes (halved)
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- ¼ – ½ cup chopped basil
- ½ cup extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 3–4 garlic cloves (minced)
- ¾ tsp Italian seasoning
- ½ tsp each of salt and pepper
Instructions
- Cook the cheese tortellini in salted boiling water according to package instructions until al dente. Drain using a colander and rinse with cool water.
- While the tortellini cooks, chop spinach, tomatoes, mozzarella pearls, basil, and mince the garlic.
- In a large mixing bowl, combine the cooled tortellini with spinach, tomatoes, mozzarella, basil, and garlic.
- Drizzle olive oil and balsamic vinegar over the mixture. Sprinkle with Italian seasoning, salt, and pepper. Toss gently to combine.
- Chill in the refrigerator until ready to serve. Toss again before serving and drizzle with balsamic glaze if desired.
