  • 2 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup butter softened
  • 1 1/2 cups sugar
  • 3 eggs
  • Seeds from 1 Rodelle Madagascar vanilla bean
  • 1/2 tsp Rodelle vanilla paste or pure vanilla extract
  • 1 cup milk
  • 1 lb butter for frosting
  • 1 pkg pistachio pudding (3.4 oz)
  • 56 cups powdered sugar
  • 46 Tbs milk for frosting
  • Chopped pistachios for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mix together your flour, baking powder, baking soda, and salt. Whisk until combined and set aside.
  3. In another bowl, beat together your butter and sugar until fluffy. Add the eggs one at a time, blending well after each addition.
  4. Mix in your vanilla bean seeds and vanilla paste until fully incorporated.
  5. Gradually alternate adding the dry ingredient mixture with milk into your wet ingredients until just combined.
  6. Pour the batter into two prepared 9-inch cake pans. Bake for about 25-30 minutes or until golden brown and springy to touch.
  7. Remove from oven and let them cool in the pans for a few minutes before transferring them to cooling racks to cool completely.
  8. In a large bowl, beat your butter until light and fluffy. Blend in the pistachio pudding mix and vanilla extract before adding powdered sugar one cup at a time.
  9. Slowly add milk until you reach your desired frosting consistency. Beat on high for about five minutes to make it fluffy.
  10. Place one layer of cake on a turntable or cake stand. Spread about one cup of frosting in the center and extend it about half an inch from the sides.
  11. Add the second layer of cake on top. Spread frosting around the top and sides until covered, reserving about one cup for decorating later.
  12. To create texture on the sides of your cake, press gently into the frosting while spinning the cake around; repeat in rows until reaching the top.
  13. Pipe remaining frosting into large roses on top of the cake as desired. Finally, sprinkle with chopped pistachios for an elegant finish.
