  • 18 oz flank steak
  • 3 tablespoons avocado oil
  • 2 tablespoons minced parsley
  • 2 tablespoons minced cilantro
  • 2 tablespoons stone ground mustard
  • 1 tablespoon red apple vinegar
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons salt

Instructions

  1. Pat the flank steak dry with a paper towel and place it in a large baking dish or Ziploc bag.
  2. In a mixing bowl, whisk together the avocado oil, parsley, cilantro, mustard, vinegar, garlic, and salt until well combined.
  3. Rub the marinade evenly over the flank steak and let it marinate in the refrigerator for at least 1-2 hours (up to 8 hours for deeper flavor).
  4. Remove the steak from the refrigerator about 30 minutes before grilling to bring it to room temperature.
  5. Preheat one side of the grill to high (450 – 500°F). Grill the flank steak for about 3-5 minutes on each side until well charred.
  6. Move the steak to a cooler part of the grill and close the lid until reaching an internal temperature of 125°F for medium-rare or 135°F for medium.
  7. Let the steak rest for at least 5 minutes before slicing against the grain.
