  • 3/4 cup sugar
  • 3 eggs
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 48 Mini Nilla Wafers
  • 2 cups powdered sugar
  • Fresh strawberries (diced)
  • Blueberries
  • Raspberries

Instructions

  1. Preheat oven to 325°F (163°C). Prepare a mini cupcake pan by lining it with paper liners.
  2. In a mixing bowl, combine softened cream cheese and sugar; beat until smooth. Add eggs one at a time, mixing well after each addition. Stir in lemon juice and vanilla extract.
  3. Place a Mini Nilla Wafer in each cupcake liner and fill with the cheesecake mixture.
  4. Bake for about 20 minutes until set; allow to cool before removing from the pan.
  5. For the topping, beat together softened cream cheese, powdered sugar, lemon juice, and vanilla until smooth; spread on cooled cheesecakes.
