  • 4 1/2 tablespoons melted vegan butter
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour (spoon and leveled)
  • 3/4 cup granulated sugar
  • Pinch of salt
  • 1/3 cup neutral flavored oil
  • 1 tablespoon apple cider vinegar (or lemon juice, optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the strawberry filling by mixing chopped strawberries with sugar and lemon juice in a bowl; set aside.
  2. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  3. In one bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, and cinnamon.
  4. In another bowl, combine wet ingredients: dairy-free yogurt, dairy-free milk, oil, vinegar, and vanilla extract.
  5. Mix wet ingredients into dry ingredients gently until just combined; avoid overmixing.
  6. Pour half of the batter into the pan, layer with half of the strawberry mixture, then add remaining batter and strawberries on top.
  7. Create the crumb topping by combining flour and sugar with melted vegan butter until crumbly; sprinkle over the cake.
  8. Bake for about 65 minutes or until golden brown and a toothpick comes out clean.
  9. Allow to cool before slicing and serving.
